Madigan Craft and Custom is dedicated to making the absolute best hot sauces and condiments you can find. Every recipe is hand crafted, in small batches from fresh ingredients that are locally sourced whenever possible. Everything is packaged by us, labeled and ready for sale. You won’t find fresher product on the market.
Where it started:
Our founder, Patrick Madigan, was born and raised in Jacksonville and has spent almost his entire life in the Southeast. He developed a love for local cuisine and everything Jacksonville. In the early 2000’s he discovered North Florida’s very own Datil pepper. Bright orange, hardy, citrusy, and hot as blazes, the Datil is quintessential Florida. Growing Datils and making sauces, salsas, relishes and shake sauce with them is a North Florida native thing to do. After trying out so many offerings from his friends, neighbors and acquaintances, Patrick decided to perfect his own. Trial and error led to the Sweet Datil recipe that is still made today.
Philosophy:
When you look at the ingredients on the label of any Madigan Craft and Custom product there isn’t much to it. Our philosophy is to use fresh ingredients, from local providers with no artificial preservatives, flavors, or colors, and no stabilizers such as xanthan gum. Yeah, you need to shake the sauce bottle before you use it, but for that flavor, a little work isn’t so bad. Oh, by the way, we support local! We truly believe that buying from local, small businesses is the best way to make sure we live in a vibrant, thriving community.
The name:
Mad Jax. There are so many layers of meaning to that name. Jax has always been the appropriate contraction for Jacksonville, and since everything we do is Made in Jax, it felt appropriate. Mad(e in) Jax! Get it? Well, there is also something about Patrick’s last name. Madigan. That begs to be shortened as well. Playing off a nick name he got in High School (Mad Man), Mad Jax was born.
What you get:
When you open a bottle of Mad Jax Hot Sauce, you get a handcrafted product made from the freshest local ingredients, hand bottled in small quantities. Unlike some brands that make hundreds, if not thousands of gallons of hot sauce at a time, our small batch process is very labor intensive. Because each pepper is different, the amount of heat in a recipe can vary from batch to batch. We also must adjust our production based on what is in season. Luckily, North Florida and South Georgia have long growing seasons so getting produce is rarely difficult.
